Pumpkin Bean Soup and PB & J

Today I brought one of my favorite brown bag meals. Pumpkin white bean soup, soynut butter and blueberry jelly (from Trader Joes) sandwich. Here is the Pumpkin White Bean Soup Recipe: 1 15 oz can pumpkin 1 14 oz can lite unsweetened coconut milk 1 15 oz can cannellini beans, drained and rinsed (I used two because I like beans) 1 14 oz can vegetable broth 1 tsp. dried leaf sage, crushed Salt and ground black pepper Cracked black peppercorns (optional) Fresh lime slices
In medium saucepan combine pumpkin, coconut milk, beans, broth, and sage. Heat throught.
Season to taste with salt and pepper. Sprinkle with black peppercorns. Drizzle with lime.
Serves 4.
